Can you finagle talking to a nutritionist about your dietary options to figure out how to work this with the lactose intolerance and being vegetarian/vegan? Possibly in the food science department at Harvard, since you probably want to talk to them anyway about the program, if your health insurance won't cover this sort of doctor's visit.
