I think we are in agreement, but I would frame it differently: They are able to appeal to both children and adults by throwing in elements that adults appreciate but will mostly go over the heads of kids.
*thinks* Actually, maybe we are thinking of different things. I remember thinking the movie had lots of allusions that kids probably wouldn't get. But you have a good point that cartoon violence can be a lot more palatable than live action violence.
I don't know about stereotyping. I think even kids might see the obvious hick and Native American analogues.
